Smoking out!!!

I smoked a prime rib last Christmas and it turned out great. I ended up with a lot more juice than that.
 
It took a lot longer to get it to 135 than what I thought it should have. It said 2 hours for a full loin to get to 125 degrees. It was only at 103 degrees after 2 hours. I may have had more juice if I had taken it off at 125 degrees... not really sure. I've never been a huge fan of prime rib, but figured we'd try it with the smoker to see if it would be any different. It's really hard to beat my char-grilled steak that I cook in 10 minutes or less.
 
Pulled pork for Christmas Day - butt on the left, shoulder on the right. Smoked 4 hrs to 160, then sealed in tinfoil with 2 cups apple cider and put back in smoker for another 4 hrs until 205 deg.

Let it rest an hour before pulling with the bear claws, separated fat from the gravy, re-added gravy to meat, then Chilled overnight. Insanely delicious after a reheat in a steamer oven. It tastes great after resting when pulled off the smoker... but that extra day in the fridge ratchets up the flavor, noticeably so!

Looking good Todd... and I have some baby backs about to go into the Pit Barrel Cooker ... and gonna try some corn on the cob as well.

Wow... had no idea Amazon was in the grocery market business.

I have not had a chance to stop by one yet.

I did get my Pit Barrel Smoker though... and that thing is F-A-B-U-W-O-N-D-E-R-M-O-U-S-!!!

We've cooked a whole chicken cut in half, two racks of St Louis style ribs, a rack of baby back ribs, and sausage thus far. The beef rub they got is awesome... purchased a couple of large bags from their online store. I'll try to remember to take some pics the next time I cook something. I want to try some beef ribs. It is really hard to believe who well the juice hangs in with the meat after 2-3 hours. Everything has been wonderful.
Amazon just opened a Amazon fresh grocery store near me last month. I should check out their meats..
