That's not near enough meat for all of us. I have some going though... maybe I can make up for it.

Looks good... and looks like you got ribs cut similar to rib tips, but not the actual tips.
 
Been cooking the butt since about 10am... almost 5 hours now. The slabs went on about 12 noon... almost 3 hours now.

Then we have the Mexitalian cowboy stuffed peppers wrapped in applewood bacon that I'm gonna try out thanks to the idea from Bacovish.

With more butt sliced up... soaked in course Kosher salt for an hour.

Just pulled my rattle snake eggs off the grill. Yum forgot to mention earlier. Bacon and fire don't mix well. Be careful. :)

Just had a new Grill delivered yesterday.... burgers last night were killer.

Summer is HERE!
 
Alrighty....

This thing is a beast. It's gas... so you hardcore charcoal and smok'n guys probably wouldn't dip in these waters... but the ease of a quick fire up wins in this household. This thing has lit knobs... a bluetooth cooking monitor (basically stick 4 probes into your meats... tell an app what kind of meat it is and how well you want it done... and it monitors the situation and tells you when to flip and when to pull it off. We tried it last night and the burgers came out a perfect medium-well)... it also has four direct and indirect heat zones for different thicknesses of meat... and has a super deep well, so no flare-ups. I think we could pretty easily feed about 12 people off it at once. It's big.

Hopefully a lot of years service ahead!

That thing is a BEAST. Looks great Todd.nothing at all wrong with a gas grill.
 
Here's the kicker - it came pre-built in the box. The box was huge, but all we had to do was attach the side wings.

Now that is rare. I've seen a lot of gas pits that I felt I was building a space shuttle when I laid everything out.
 
For sure... I should have taken a photo. The box, as I mentioned, was huge... and the bottom was the thick molded plastic that held the wheels, etc, in place. It was a very pleasant surprise when it came off the truck.

Seriously. I've never used anything like this. But, the first experience was pretty sweet. I sat on the couch watching baseball and got alerts right on my phone.

How lazy can we get!?!? :dontknow:

Will be nice when friends are over... can concentrate on company without worry about remember to check the meat!

A meal without one of Sonnie's salads is only half a meal. The jalapenos really add a nice zip with just a touch of heat.

Some 3 hr slow cooked pork spare ribs and some pork shoulder country ribs. With some stubs rub and sauce.
